Ingredients:
Ingredients:
4 ripe but firm peaches
1 handful fresh berries
2 tbsp liquid honey
1/4 cup butter, cut into bits
1/4 cup sugar
1/2 cup all-purpose flour
1/4 tsp cinnamon
pinch salt

Directions:
Directions:
Preheat the oven to 350˚F. Slice the peaches into a shallow baking dish—or into 4 individual shallow baking dishes. (If you like, sit all the slices upright.) Scatter the berries into any gaps. Drizzle with honey.
In a small bowl, rub together the butter, sugar, flour, cinnamon and salt until well-blended and crumbly. Sprinkle over the fruit, squeezing the mixture as you go to create big, rubbly clumps. Bake for 45 minutes to 1 hour, until the peaches are soft and turning golden on the tips, and the rubble is pale golden.
Serve warm, with vanilla ice cream. Serves 4-6.

Personal Notes:
The flavour of the fruit is paramount here, complemented by sweet, buttery shortbread crumble. This makes the perfect vehicle for vanilla ice cream.
