3/4 c. flour
1/2 c. sugar
1/4 t. baking powder
1/4 t. baking soda
1/4 t. salt
1/4 t. cinnamon
1 egg
1/4 c. oil
1 c. zucchini, unpeeled & finely shredded
1/2 c. walnuts
1/4 c. raisins, chopped

Directions:
Directions:
In a bowl, combine the first 6 ingredients. Combine the egg and oil; stir into dry ingredients just until moistened. Fold in the zucchini, walnuts and raisins.
Fill paper-lined muffin cups 3/4 full. Bake at 350* for 22 - 25 minutes or until toothpick comes out clean. Cool 5 minutes before removing from pan to wire rack. 1/2 dozen
