2 c. flour
1 1/4 c. sugar, divided
2 t. baking powder
1/2 t. salt
1 egg
1 c. milk
1/3 c. oil
1 c. chopped fresh or frozen rhubarb

Directions:
Directions:
Combine flour, 1 c. sugar, baking powder and salt. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in rhubarb.
Fill paper-lined muffin cups 3/4 full. Sprinkle with remaining sugar. Bake at 350* for 25 - 30 minutes or until test done. Cool slightly before removing to wire rack. 1 dozen
