1 c. quick-cooking oats
3/4 c. flour
3/4 c. whole wheat flour
1/2 c. dark brown sugar
2 t. baking powder
1 t. baking soda
1/2 t. salt
2 eggs
1 c. buttermilk
1 c. maple syrup
10 bacon strips, cooked & crumbled

Directions:
Directions:
In a large bowl, combine the oats, flours, brown sugar, baking powder, baking soda and salt. In another bowl, beat the eggs, buttermilk and syrup. Stir into dry ingredients just until moistened. Fold in bacon.
Fill greased or paper-lined muffin cups 2/3 full. Bake at 350* for 20 - 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire rack. Makes 20
