1/2 Tbsp Dijon mustard
1/2 tsp honey
pinch of salt (approx. 1/8 tsp)
fresh ground black pepper ( 3 or 4 grinds, about same amount as salt)
2 Tbsp. red wine vinegar
6 Tbsp. extra virgin olive oil

Directions:
Directions:
In a medium bowl, whisk together Dijon mustard, honey, salt, pepper and red wine vinegar.
Gradually drizzle the olive oil into the vinegar mixture...whisking the whole time. It will thicken as you whisk.
Makes about 1/2 cup of vinegrette.

This is a basic vinegrette and it will enhance the greens/lettuces in your salad.
It should taste a little salty and slightly acidic/vinegary.









ALTERNATE:

BALSAMIC VINEGRETTE:

Follow the same recipe as above but use Balsamic Vinegar.
