4 tomatoes, peeled and sliced
8 to 10 fresh basil leaves, chopped
1/3 cup chopped green onion
1 9-inch pre-baked deep dish pie shell (bake crust 8-10 minutes before assembling pie)
Salt and Pepper to taste
1 cup grated provolone or pepper jack cheese
1 cup of grated cheddar
1 cup olive oil mayonnaise

Preheat oven to 350 degrees. Layer tomato slices, basil, and onion in the pie shell. Should be able to have at least 2 layers. Add salt and pepper to taste. Mix together cheeses and mayo and spread on top of the tomatoes. Bake for 30 minutes or until lightly browned.

I serve this with a green salad using fruit (apple, dried cranberries, peaches) and sweet poppy seed dressing for a wonderful light vegetarian meal. This can be used as a side dish. Especially nice with steak when you're looking for something other than the traditional potato options. Enjoy!
