1 c. butter
1/2 c. sugar
2 tsp. vanilla
2 c. sifted all-purpose flour
1/2 tsp. salt
2 c. finely chopped Missouri pecans
Confectioners' sugar

Directions:
Directions:
In a large mixing bowl, beat butter, sugar and vanilla until fluffy. With spoon, stir in sifted flour and salt, mixing well. Add pecans and mix thoroughly, allowing the dough to stiffen in the refrigerator 10 to 20 minutes. Preheat oven to 350º. Quickly form dough into about 1-inch balls, rolling with clean hands lightly coated with flour. Place about an inch apart on a baking sheet; do not flatten. Place oven rack in the middle position and bake one sheet at a time for 15 - 20 minutes being careful not to brown. Remove from baking sheet, cool, then roll in sifted confectioners' sugar to coat heavily. Store in tightly covered container in the refrigerator. You may recoat the cookies with confectioners' sugar just before serving.
