6 T. butter or margarine, softened
1 c. packed brown sugar
1 egg
1/2 c. unsweetened applesauce
1 tsp. vanilla extract
1 tsp. grated orange peel
1 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. chopped pecans
Frosting:
1/4 c. butter or margarine, softened
2 c. powdered sugar
1 1/2 tsp. grated orange peel
2-4 tsp. orange juice

Directions:
In a mixing bowl, cream the butter and brown sugar. Add egg; beat well. Beat in applesauce, vanilla and orange peel. Combine the flour, baking powder, salt and baking soda; add to creamed mixture. Stir in pecans. Fill paper-lined muffin cups half full. Bake at 350º for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. For frosting, in a small mixing bowl, cream butter and powdered sugar. Add orange peel and enough orange juice to achieve spreading consistency. Makes 1 dozen.
