Whole chicken (5 pounds)
1 stick butter, softened
1 t. Kosher salt
2 T. Montreal steak seasoning
2 lemons, quartered

Preheat cast iron skillet inside oven to 450°F. Remove giblets & neck from inside chicken. Rinse chicken & pat dry. Place ½ of the butter under chicken skin covering the breasts. Rub remaining butter over the entire chicken, coating the skin thoroughly. Season with salt and steak seasoning. Place 1½ lemons inside chicken cavity. Juice the remaining ½ lemon over the top of the chicken. Transfer chicken to hot skillet. Roast for 50 minutes (internal temp should be 165°F). Remove from oven and baste with cooking juices. Let chicken rest 15-20 minutes before serving.
