16 c. mashed potatoes
1 c. butter
8 c. flour
1 c. whipping cream
2 tbsp. salt

Directions:
Directions:
Peel, cook, and rice potatoes. Mix in butter (no substitutes), cream, and salt. Cool overnight. Mix in flour (starting with 6 cups and adding more only if needed). Roll out with additional flour. Fry on non-greased griddle until lightly brown on each side. Makes approximately 24 to 30 medium to large pieces of Lefsa.

2 medium potatoes make about 1 cup of mashed potatoes.
