8 salmon fillets, about 6 ounces or so and the “flap” trimmed off.

The Glaze;

3 tablespoons light brown sugar
1 tablespoon honey
2 tablespoons butter
1/4 cup Dijon mustard
2 tablespoons soy sauce
2 tablespoons olive oil
1 tablespoon finely grated ginger
Canola oil
Salt and freshly ground black pepper

Directions:

On the side burner, melt the brown sugar, honey and butter in a small saute pan over medium-high heat. Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger. Let cool.

Preheat grill to medium heat. Brush the skin side of the salmon with oil and season with salt and pepper to taste. Place the salmon skin side down on the grill. Coat the flesh side of the salmon fillets with the glaze. Grill for 6 to 8 minutes to medium doneness, turning once after 5 to 6 minutes. When done put a final coat of the glaze on the salmon and pour the rest in a bowl to use as a garnish at the table.

The glaze is what makes this dish great. We are always looking for a new ways to make Americas favorite fish so here you go.

About that stupid “flap”on the salmon. It really chaps my butt when your grocery store sells you a salmon fillet with the “flap” or “trailing edge" still on the filet. Really!!! How can you cook a salmon filet or any filet for that matter that is 1 1/2 inches thick at one end and an 1/8 of an inch at the other end?? The flap always turns into a potato chip and is worthless.There just trying to make a buck off you because they can. Sorry, had to vent a little bit!
