2 c. raisins
1/4 c. chopped nuts
1 c. sugar
2 Tbsp. corn starch
1/2 c. water

Cookie Dough:
2 c. sugar
1 c. shortening, 1 1/2 c. if using buttermilk
1 c. sour cream or buttermilk
1 tsp. soda dissolved in sour cream or buttermilk
3 eggs
1 tsp. baking powder
1 tsp. nutmeg
Flour for dough and to roll, 6 - 7 cups

Filling: Cook all ingredients until thick. Cook
Cough:
Cream shortening, sugar until smooth. Add eggs, one at a time. Combine
3 cups of flour with baking powder and nutmeg. Add alternately with buttermilk mixture. Keep adding flour to make a dough that can be rolled.
Roll dough to 1/4 inch depth. Cut with a round cookie cutter
Top 1/2 of the circles with a tsp. of filling. Top with a second circle. Crimp edges with a fork to seal.
Heat oven to 350º. Bake cookies for approx. 15 min.
