1/2 cup of dark brown sugar
2 egg yolks
1/4 cup of cornstarch
1//2 teaspoon of salt
1 cup of fresh heavy cream
1 cup of whole milk
1 tablespoon of unsalted butter
1 teaspoon of pure vanilla extract

In a heavy sauce pan under low heat combine the brown sugar, cornstarch and salt. Stir to mix thoroughly. This ensures she won't have any clumps. Turn your heat up to medium-high and add your cream, milk and egg yolks. Immediately stir to incorporate all the ingredients before your pan gets too hot. You don't want your egg yolks to scramble. You can use a hand whips or an electric beater on low. Do not walk away! If you do it well coagulate on the bottom and burn. You have to constantly stir for about five minutes until it is thick like putting should be. Once you're putting his reached the correct consistency remove from heat. Add in your 1 tablespoon of unsalted butter (they better makes it shiny and rich) and your vanilla extract. Stir until completely IncOrporated. At this point you can put into serving dishes or A a closed container and refrigerate or serve warm. Note: make sure and use dark brown sugar, not light brown sugar. The dark brown sugar is where you get the butterscotch taste.

This is fun and simple to make and delicious. It's gluten-free and kids love it! Put it on top of chocolate ganache (1/2 cup of heavy cream and 8 ounces of bittersweet chocolate melted together) to get a great contrast in flavors and a touch of chocolate.
