2 ¼ c flour
1 c cold butter
1 t salt
5 medium pears, peeled
½ c sugar
2 T lemon juice
½ c brown sugar, packed
1 t cinnamon
¼ t nutmeg
¼ t cloves
½ c shredded cheddar cheese

Directions:
Directions:
Two hours ahead of time, cut ¾ c butter into 2 C flour and salt, until coarse crumbs. Take out 1 C for topping.

To remainder, add 2 ½ to 3 tablespoons cold water (1 tablespoon at a time). 
Shape in ball. Roll to 11” circle (9” pie plate). Trim to 1” overhang and fold under. Flute edge high.

Cut up 4 ½ c pears, toss with sugar, ¼ c flour, lemon juice. Place in unbaked pie shell.

To saved portion of flour mix, add brown sugar, cinnamon, nutmeg and cloves. Cut in cheese and ¼ C butter. Sprinkle over pears.

Bake at 425 degrees for 40 minutes. Cover with foil and bake for 20 more minutes.
