1 serving ( four pancakes)
mix dry with fork:
½ cup (in a blender) dry oatmeal
1 scoop vanilla whey
¼ tsp baking powder
pinch of nutmeg
combine well
wet ingredients:
3 or 4 egg whites, or 2 whole eggs
¼ tsp pure vanilla extract
¼ cup cooked sweet potato puree you can use canned or previously baked

Mix wet ingredients well with a fork.
combine wet and dry ingredients to make batter.
cook on a med-high griddle

while pancakes are cooking you can drop 3 dark cacao chips in each pancake
serve with a dollop of fresh coconut cream whipped the stevia and cinnamon

I like to make ziplock bags of dry ingredients and store in cupboard and a separate ziplock bag of 1/4 cup of mashed sweet potato in freezer.

This makes it easier to make a healthy breakfast in a short amount of time .
