1 Whole Chicken
1 Can of Beer
3 Tablespoons Olive Oil

FOR THE RUB:
1 Tablespoon Brown Sugar
1 Tablespoon Dry Tarragon
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Tablespoon Smoked Paprika
1 Teaspoon Garlic Powder
1/2 Teaspoon Chili Powder

Preheat oven to 425º.

Mix all the rub ingredients together.

Open the can of beer and pour out about 1/4 of it into a large roasting pan, then set the can of beer in the center of the roasting pan.

Clean the chicken and remove any giblets; pat the chicken dry with paper towels.

Massage the rub into the chicken. Make sure to get rub into all of the nooks and crannies.

Place the chicken upright over the beer can. Drizzle the olive oil over the chicken.

Bake in the oven for 1 hour and 15 minutes or until golden and cooked through. To check to see if it is done, insert a knife into the thickest part of the thigh. If the chicken is done, juices should run clear.
