For the Crust:
3 Graham Crackers
1/4 Cup Sliced Almonds
1/2 - 2 Tbls. butter
1 Tbls. sugar


For the Lemon Curd:
3 Large Eggs plus 1 yolk
1 Cup Sugar
1/2 Fresh Lemon juice
6 Tbls.butter at room temperature
Zest of one whole lemon


Meringue Frosting:
4 Egg Whites
1 Cup Sugar
1/4 Tsp. cream of tartar
1 Tsp. good vanilla

For the crust put all the ingredients in the food processor, pulse till you have a crumb consistency.

For the curd:
Place the eggs, yolk, sugar and lemon juice in a heat resistant bowl, whisk together. Sit the bowl over simmering water, whisking the whole time till it looks like pudding, if you are unsure use a candy thermometer and whisk till it reaches 160 degrees.
This took me about 9 minutes.
Once it has thickened pour into a glass bowl and whisk in zest and butter.
lay plastic wrap on top of the curd so it does not form a skin.
Refrigerate for a least two hours or overnight.


For the frosting:
Put the egg whites, sugar and cream of tartar in your mixing bowl and set over simmering water, whisk till this reaching 140 degrees. Remove from heat and add vanilla.
With your whisk attachment beat on medium high speed for about 6-7 minutes till you have glossy stiff peaks.

To Assemble:
Spoon graham cracker crumbs in the bottom, pipe a little curd and then pipe a little meringue on top, repeat this a couple of times.
If you have a kitchen torch it's nice to brown the tips but not necessary.

Put a small lemon wedge on top for garnish. (optional)

This is so cute! These are 2.5 oz shot glasses. This makes a great small light dessert or would be great for a tapas party.

Tom did laugh the first time he saw them because of course it would take five for him to be happy and feel like he had dessert!
