1/2 cup butter
1/2 cup light brown sugar
1/4 cup light Karo syrup
2 eggs, beaten
1 can evaporated milk
3 cups cooked, mashed sweet potatoes
2 tsp. vanilla
1/4 tsp. salt
1 unbaked 9-inch pie crust
Nutmeg (optional)

Directions:
Directions:
Preheat oven to 375 degrees. Cream butter, brown sugar and syrup together. Add eggs and stir. Add sweet potatoes and mix well. Stir in the milk, vanilla and salt, making sure all ingredients are thoroughly mixed. Pour into the pie shell and bake 40 minutes, or until a knife inserted in the center comes out clean. Dust top with freshly grated nutmeg if desired. Serves 8.

This recipe makes enough to filling for a deep dish pie. I found it's also best to bake the potatoes to bring out their natural sugars.
