6 slices of smoked bacon, diced
2 cans of "French style" green beans or 2 large handfuls of fresh green beans, ends removed and snapped.
1 cup chicken stock (for use with the fresh green beans only)
1/2 onion. diced
1 table spoon apple cider vinegar or juice of 1 fresh lemon
1 teaspoon sugar
1 teaspoon hot sauce
11/2 tablespoons of Lee & Perrin's
Seasoned salt
Fresh cracked pepper

In a heavy pot render down your bacon to extract the bacon grease. If using fresh green beans add you chicken stock and the beans and simmer for 30 to 45 minutes until the beans are tender. If using canned green beans add the beans with the can juice. Bring to simmer and add the onions and all the spices and sauces. Simmer for 15 to 20 minutes and adjust your seasonings to suit your taste.

Everyone seems to love this dish. Over the past 30 years or so my family and friends seems to ask for Pa's Green Beans more than any other side dish that I make. There is never anything leftover. Play around with this recipe. I like fresh green beans over canned. You have to cook the beans much longer in the chicken stock to tenderize them but I think the end results is worth it Add more bacon if you like. Fact; bacon grease is the backbone of the dish for sure! Adjust you condiments to suit your personal likes. Try fresh lemon juice in lieu of vinegar, more or less sugar (I have never like more sugar but you need little to offset the acid) and vary the hot sauce and Lee & Perrin's.
