3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated zucchini ( can use 1 apple,1 zucchini and cranberries to make 2 cups)
3 tsp. vanilla
3 cups sifted flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1 tsp baking powder
1 cup nuts
For Pumpkin/Cranberry Bread substitute for zucchini the following: 1 cup pumpkin puree (canned or fresh) 1 tsp nutmeg, 1/4 tsp ground cloves, 1/2 cup whole cranberries

Beat eggs until light & foamy. Add oil, sugar, zucchini, and vanilla. Mix lightly but well until sugar is well mixed.
Sift all remaining dry ingredients together. Add in small batches to egg/zucchini mixture. Add nuts if desired.
Pour into 2 (9x5x2) loaf pans or 3 small loaf pans that are greased with butter and floured
Bake at 350 for 45 minutes or until broom straw comes out clean from center for large loaf. Can try baking at 325 for 3 small loaves for 1 hour. Depends on your oven.
