4 pounds of pork shoulder (Shoulder or Butt Roast)
2 inch piece of fresh pealed ginger
4 fresh scallions, cut into 3 inch pieces
9 cups of water or enough to cover the roast. Don't over water.
3 star Anees pods
1/4 cup of soy sauce
2 tablespoons of sugar

For the roles:

1 cup of shredded Chinese pork
5 teaspoons of hoisin sauce
1 teaspoon of oyster sauce
1 teaspoon of water
flour tortillas

Directions:
Directions:
Place the pork, scallions, water, ginger, and Star Anees into a large stock pot. Bring to a boil then turn down the heat to low, cover and simmer for 2 1/2 hours. Turn the heat to high and add the soy sauce and sugar. Cook for an additional 30 minutes. Remove from heat and remove the pork from the water. Discard everything and using a fork shred the pork.

To make the rolls combine all the ingredients for the sauce and spread the sauce over warm tortillas. Add your pork and any garnishes you might enjoy such as shredded Scallions, rollup and enjoy.

The pork can be used for a million different thinks. Enjoy the rolls and use your imagination with the pork. It works really well in Stir fry's using you wok!
