16 hot peppers (cayenne)
12 green (or mixed colors I do half red) peppers 3 lbs
8 onions 3 lbs
1 c cold water
1 c vinegar

2 c vinegar
3c sugar
1 T salt (canning or kosher)

Directions:
Seed and grind peppers. Wear gloves while working with hot peppers.
Cover peppers and onions with boiling water. Let stand 5 minutes. Drain into colander
put 1 c cold water and 1 c vinegar in a pot and heat to a boil. Pour this over the pepper and onion mixture.
Let stand 1 hour (can be left overnight) then drain

Heat together vinegar, sugar and salt. Put vegetable in and bring to boil. put in sterilized jars and seal.
Tripled the recipe made 17.5 pints.

36 sweet peppers
9 lbs onions
3 c cold water and 3 c vinegar

6 c vinegar
9 c sugar
