one and a half cups of grated zucchini
1 cup of all-purpose flour
half a cup of unsweetened cocoa powder
3/4 teaspoon of baking soda
one fourth teaspoon of baking powder
1/4 teaspoon of salt
half a teaspoon of instant coffee powder or one fourth teaspoon of espresso powder
three fourths cup of semi sweet chocolate chips or dark chocolate
1/4cuo plain greek yogart (i use vanilla yogart)
1/4 cup vegetable oil
2 large eggs
1/2 cup of sugar
1 teaspoon of pure vanilla extract

adjust the oven rack to have North 3rd position and preheat oven to 350 3955 loaf pan with nonstick spray and set aside.
place the shredded zucchini on a couple of paper towels to absorb some but not a moisture. Press a paper towel on top as well. Set aside .
in a large bowl, what's the flour ,cocoa powder, baking soda, baking powder, , instant coffee,and chocolate chips until combined and set aside.
in a medium bowl, whisk eggs, oil, yogurt, sugar, and vanilla together until completely mixed. Pour the wet ingredients into the dry ingredients
it was until combined. Using a rubber spatula or a wooden spoon, fold in the zucchini. pour batter into prepared baking pan.
bake for 45 to 55 minutes or until toothpick comes out clean
