5 Pounds Idaho or Russet Potatoes
3 Large Vidalia Onions
1 Large Red Onion
3 Large Bell Peppers (Red and Green)
1/3 Cup Olive Oil
2 Packages Lipton Onion Soup Mix
2 Tbsp. Coarse Ground Black Pepper
1/2 Tsp. Red Pepper Flakes (Optional)

Directions:
Wash potatoes and bell peppers. Slice potatoes in half length wise and cut in 2 inch pieces. Slice bell peppers and remove the membrane and seeds. Cut into 2 inch pieces. Peel and slice onions in half and half again. Place all vegetables in a large baking dish (9x13 or larger), add olive oil, and make sure all vegetables are well coated with oil. Bake at 400 degrees for approximately 20 minutes, stir to make sure vegetable don't stick. Sprinkle with Lipton onion soup mix and bake for another 20 minutes or until potatoes are tender.
