2 pkg. shredded prosciutto
2 large pkg. frozen peas
1/2 jar seasoned feta
1 red onion, thinly sliced
3 ripe red tomatoes, thinly sliced
Salt and pepper

Directions:
Directions:
Heat oven to 450º. Place prosciutto in a single layer on a baking sheet and bake until it begins to darken (10-12 min.) Let cool. Rinse frozen peas in a strainer under cold water. Drain well. Toss the peas with the the seasoned feta, onion, and olive oil, saving a little bit of the oil for the tomato slices. Add prosciutto and 1/2 tsp. salt and pepper. Refrigerate. Serve on a large platter, surrounded by thin tomato slices. Season tomatoes to taste with dill, sea salt, and freshly ground black pepper.
