Small red potatoes, scrubbed
2 pkg. or one large bag thin, fresh green beans
1 container crumbled blue cheese
Salad dressing(Italian or vinaigrette works best)
Fresh parsley, chopped
Salt and pepper to taste

Directions:
Directions:
Make this chilled salad as early as possible. Boil red potatoes, being careful to not overcook. Rinse with cold water; slice in half. Blanch, steam, or microwave the green beans; rinse in cold water and dry with paper towels. Combine the potatoes green beans, crumbled blue cheese, and chopped parsley in a large serving bowl. Carefully dress with salad dressing, toss, and refrigerate anywhere from one to twelve hours.
