4 Skinless boneless Chicken Breasts
1/2 tsp. salt
1/2 tsp. pepper
1-1/2- 2 lbs broccoli chopped
4 cloves garlic, minced
2 Roma tomato sliced
4 sprigs of fresh basil thinly chopped
6-8 slices of fresh mozzarella
4 tsp. Dijon mustard
4 tsp. brown sugar
4 T. balsamic vinegar
6 T. Olive Oil

Directions:

Preheat oven to 400 degrees
Whisk together balsamic, mustard, brown sugar and olive oil.
Toss half with the broccoli and spread on to sheet pan. Sprinkle with salt and roast for 25 minutes, shaking midway through cooking time.

Heat olive oil in large saute pan and cook chicken until browned and cooked through.
Add mozzarella to top of chicken, then basil, then tomato slice.
Drizzle with rest of sauce

Enjoy with the crunchy broccoli

Very nutritious and low calorie (341) but does not taste low cal. Leftovers (if there are any) may be used to make a Chicken Caprese sandwich. Less healthy but super delicious.
