2 frying chickens, about 3 lb. each, cut into serving pieces.
2 tbsp. vegetable shortening
salt and fresh ground pepper
1 lb. button mushrooms, halved
1 small onion, chopped
3/4 cup AP Flour
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. paprika
6 cups milk
1/4 cup dry Sherry

In a large skillet, brown chicken pieces in the shortening, adding sale and pepper as desired. Remove chicken from the skillet and place in an oval roasting pan. Pour excess fat from the skillet. In the remaining fat, sauté mushrooms and onions until soft and beginning to change color. Preheat oven to 325º. Combine the flour with the salt, pepper and paprika. Whisk the dry mixture into the mushroom mixture until all lumps disappear. Add milk and stir until the mixture is smooth, covering the chicken pieces. Bake in the oven covered for about a hour or until the chicken begins to fall off the bones.
To serve, arrange chicken on a bed of rice or noodles. Pour the sauce from the pan into a warm bowl and whisk it lightly. Pour a little of the sauce over the chicken and then serve as a side,
