1 cup dry white wine
1 cup white wine vinegar
1/2 cuo water
2 tbsp sugar
2 tbsp dried basil
2 tbsp dried oregano
2 tbsp balsamic vinegar
9 cups chopped cored plum tomatoes 1inch pieces

Prepare canner jars, a n d lids.
In a large ,deep stainless steel sa uce p an, combine garlic,wine,wine vinegar,water,sugar,basil,oregano, and balsamic vinegar.
Bring to a full boil over high heat, stirring occasionally. Reduce heat, cover and boil gently, for 5 mins,until garlic is heated through . Remover from heat..
pack tomatoes into hot jars put hot vinegar mixture into jars cover tomatoes leaving half inch headspace remove air bubbles and adjust head space if necessary but adding hot liquid wipe off rim center lid on jar screw band down until resistance is met then increase to fingertip tight place jars in canner ensuring they are comfortably covered with water bring to a boil and process for 20 minutes remove canner lid wait 5 minutes then removed cool and store
