2 10 oz.bags of fresh black eyed peas or
4 cans of black eyed peas & snaps or
2 cups of dried black eyed peas
8 cups beef broth reduced to 4 cups
1 large onion diced
3 Smoked Ham Hocks
black pepper
Lawyers seasoned salt
1 stick butter
3 tablespoons of Worcestershire
1/2 teaspoon of liquid smoke (optional)
1 teaspoon cayenne pepper (optional) or
1 diced jalapeņo pepper finely diced, seeds removed (optional)

We have options here. If you're using dried black-eyed peas, soak them in water for six hours, pour off water and use for the dish. If we're using canned black-eyed peas do not use the broth. If for using fresh black-eyed peas (my most favorite) stick to regular recipe.

In a large, heavy cast-iron pot brown the ham hock's on all sides over medium heat until the hocks are dark brown all over. Once the ham hock's are browned add your stock, onions, Worcestershire, Lowery's seasoned salt and cayenne pepper or diced jalapeņo pepper if you choose to use them and bring mixture to a medium boil. Cook for about an hour adding water as necessary to maintain liquid level. You want the ham hock's meat falling off the bone. Add in your black-eyed peas and your butter and continue to cook on a medium simmer for an additional 45 minutes to one hour. Be careful not to cook the beans to where they start to fall apart or become a mushy. You have to be careful if you're using the canned or fresh black-eyed peas but not so much with the dried black-eyed peas. The key here is to remember never to get above a fast simmer. Feel free to adjust your spices as you feel fit. I often times serve this with a condiment of fresh chopped onions and/or tomatoes with parsley and minced jalapeņo.

These are my favorite black-eyed peas for New Year's. It's always great to serve a big wedge of sweet cornbread alongside your black-eyed peas. Check out the recipe "Hopping John" for a nice deviation using black-eyed peas.
