12 medium to large shrimp on skewers
1 cup of diced slab bacon
2 diced tomatoes
Diced scallions, green part only
2 clothes of garlic diced
Diced thyme
Diced parsley
Red wine vinegar, dash
Salt-and-pepper

Optional;
Smoked Paprika
Quarter teaspoon of cayenne pepper.

Cook off your diced slab bacon and I have a cast-iron skillet until crispy and reserve the bacon fat. In a saucepan add the bacon fat, your diced tomatoes, diced garlic, green onions, thyme, parsley and salt and pepper. Sauté for about 2 to 3 minutes on high heat. Add your crispy bacon in and toss for a minute or two. Add a dash of red wine vinegar and cook for another 30 seconds and pour onto large serving platter.

For the shrimp, brush with canola oil and add salt and pepper. Place on the grill from 1 to 2 minutes on each side being careful not to overcook. Remove shrimp and spread out over the top of your tomato and bacon sauce.
