Ingredients: Fresh green beans Olive oil Minced garlic, 1 or 2 cloves Anchovy paste to taste. Typically 1 tablespoon. Dry white wine, Typically a half a cup or so Salt-and-pepper

Directions:Prepare your fresh green beans. Snap the ends and remove the fiber string that runs the length of the green beans. Blanche the green beans in boiling water for 1 to 2 minutes and then place in icewater to stop the cooking process. In a large skillet add your olive oil and garlic and sauté for 30 seconds being careful not to brown or over cook the garlic. Add your blanched green beans and sauté for two or three minutes over high heat constantly keeping the moving. Add your anchovy paste to taste and White wine. Simmer three or four minutes and add salt-and-pepper to taste. Remove from heat and serve immediately. These are fresh and crunchy and full of flavor. |

Notes: Worried about anchovy paste. Simply put, it's delicious. I use it my spaghetti sauce all the time. see recipe for seafood spaghetti. Don't be afraid to add a lot to this dish because it really adds a wonderful flavor and dimension.
