6 oz. Cream Cheese
3 tbsp. sliced almonds
6 lasagna noodles or any other pasta
1/4 cup margarine
1 medium onion, diced
4 oz. fresh mushroom, sliced
3 boneless skinless chicken breast, cut into bite size pieces
3/4 cup, dry white wine
1/2 tsp. dried tarragon leaves, crushed
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup heavy cream
1/2 cup sour cream
1 1/2 cups shredded Swiss Cheese, divided
1 cup shredded Muenster, divided
Chopped Parsley

Place cream cheese with package opened on cutting board. Cut cream cheese into cubes. Let stand at room temperature until softened.
To toast the almonds, spread on a baking sheet. Bake in a preheated oven at 350º for 8-10 minutes, stirring frequently until golden brown. Remove almonds from pan and let cool; set aside. Reduce oven temperature to 325º. Grease a 13x9 baking pan; set aside.

Cooking pasta according to package directions. Drain in colander. Rinse under warm water running water, drain well. When cool enough to handle, cut lasagna noodles in half. Melt margarine in a large skillet over medium-high heat. Cook and stir onion and mushrooms in hot margarine until tender. Add chicken, wine, tarragon leaves, salt and pepper; bring to a boil over high heat, Reduce heat to low. Simmer 10 minutes.

Curl each lasagna noodle half into a circle; arrange in prepared pan. With slotted spoon, fill center of lasagna rings with chicken mixture.

To remaining liquid in skillet, add cream cheese, heavy cream, sour cream, 3/4 cup of Swiss cheese and 1/2 Muenster cheese. Cook and stir over medium-low heat until cheese melts. DO NOT BOIL! Pour over lasagna rings. Sprinkle with remaining cheeses and almond on top. Bake 35 minutes or until bubbly. Sprinkle with parsley. Garnish as desired.

At times I will substitute another type of pasta, spread it in the 13x9 pan and pour chicken and cheese mixture over the top. The sprinkle with cheese and almonds and bake for the 35 minutes. I love this recipe along with garlic bread,
