2 parts waxy potatoes
1 part carrots
1 part golden (preferably) or red beets

1/2 part sauerkraut chopped
1/4 part pickles cubed.(can be brined, sweet or dill)
1 shallot or small onion minced

olive oil
pickle juice (I used a fresh pickle with dill)

Directions:

Cut potatoes and carrots into 1 cm cubes. Boil together until just tender. Drain.
Boil unpeeled baby beets until tender. Put into cold water, peel. Chop into 1 cm cubes.
Toss veg, sauerkraut pickles and onion together in a large bowl. Add olive oil to coat and pickle juice to taste. Black pepper or dill may be added to taste

Some recipes called for white beans or green peas. This looks like the kind of recipe everyone makes by feel. It was really good.

Chill before serving.
