1 lb. (2 c.) raw rice
1 1/2 lbs. lean pork
2 T. oil
1 c. water
1 chicken bouillon cube
1/4 tsp. salt
1 med. green pepper, cut into strips
1/4 c. sliced onion
1 (20 oz.) can pineapple chunks, in heavy syrup
1/4 c. brown sugar
2 T. cornstarch
1/4 c. vinegar
1 T. soy sauce
1/2 tsp. salt
Chinese noodles (optional)

Directions:
Directions:
Cut pork into 2 x 1/2 inch strips and brown in the oil. Stir in water, bouillon and salt. Cover and simmer until tender (about 1 hour). In another pan, mix juices from pineapple, brown sugar, cornstarch, vinegar, soy sauce and salt. Cook until bubbly and thick. Pour over meat mixture and add pineapple, green peppers and onion. In the tradition of Chinese cooking, only cook until vegetables are hot. The peppers and onions will still be slightly crunchy. Sprinkle with crisp Chinese noodles, if desired and serve over rice.
