1 lg or 2 small chicken breasts
Salt and Pepper to taste
1 tsp oil (your choice)..
Tri-colored bell peppers, cut into strips
Onion, cut into strips
Cherry tomatoes, 4-6 ea, cut in half
¼ c water

Directions:
Directions:
Heat oil in small sauté pan on med-high heat. Salt and pepper chicken on ‘skin’ side (smooth side) and lay gently in pan seasoned side down. Season other side with S & P. DO NOT turn or move chicken breast for 2 minutes or until it releases from the pan easily. Turn when browned, app. 4-6 minutes. After turning, add vegetables, season lightly with S & P on veggies and add water. Cover and turn heat down (low to med-low), keeping water simmering in pan. Cook until chicken is cooked through (170 degrees with a thermometer or no longer pink in thickest part of meat). Time will depend on thickness of chicken. Remove and set aside on a plate – cover with lid. Reduce liquid with vegetables to thicken slightly. Divide into servings and enjoy!

The chicken is extremely moist due to the self-basting from covering with the lid. GREAT with rice, pasta or by itself!
