2 cups sugar
1/2 cup cocoa
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp vanilla
4 eggs
1 1/2 cups oil
3 cups pureed zucchini
3/4 cup chopped nuts (optional)

Directions:
Directions:
Preheat oven to 350º.
Put the oil in the blender and add enough zucchini to equal 4 1/2 cups. (1 1/2 cups oil plus 3 cups zucchini).
Put the zucchini and oil mixture in a bowl and add sugar, eggs and vanilla. Blend well. Add the remaining ingredients and mix.
Put in a 9 x 13 inch greased pan and bake for 40 to 45 minutes or until a toothpick comes out clean.

Buttercream Frosting
1 cup unsalted butter
3 1/2 to 4 cups powdered sugar
1/4 tsp salt
1 TBSP vanilla extract
4 TBSP heavy whipping cream

Beat butter for a few minutes. Add 3 cups powdered sugar and beat on low until the sugar has been incorporated with the butter. Add vanilla, salt and cream. Beat for about 3 minutes and add more powdered sugar or milk as needed.

Frost the cake when it is completely cool.
