1 - 9 inch pie shell
1/2 yellow onion chopped
3 to 4 tomatoes cut in half - squeezed to remove excess juice & roughly chopped
2 cups grated cheese/ sharp, cheddar & mozzarella mix
3/4 cup mayonnaise
3 to 4 dashes hot sauce
salt & pepper
1/4 cup sliced basil (7-8 leaves)

Directions:
Directions:
Preheat oven to 350º.
Lightly brown pie shell.
Salt the tomatoes & pat dry with paper towel to remove any moisture.
Layer the onions, then tomatoes, then basil.
Mix cheese, mayonnaise, hot sauce, salt & pepper.
Pour over basil.
Bake for 30-40 minutes.

We are crazy about tomatoes and my garden is giving us some great ones this year! We are eating tomato sandwiches, snacking at night on sliced tomatoes and this EASY Tomato Pie is a favorite and makes a great side dish. If you love tomatoes like we do, it's a must try! It's a winner in our home and even better the second day!!
