1/2 (24 oz) pkg traditional mashed potatoes
1 lb ground Italian sausage
1 egg
8 oz Italian cheese blend
1/8 tsp garlic powder
pinch of red pepper flakes (optional)
2 cups seasoned panko breadcrumbs, divided

Directions:
Directions:
Combine all ingredients and 1/2 cup of bread crumbs in a mixing bowl. Mix thoroughly.
With wet hands, roll potato mixture into 1 1/2" balls. Place remaining bread crumbs on a large plate. Roll each potato ball in bread crumbs. Make sure they are evenly coated. Place sausage balls on a large plate or pan and put in fridge for 30 mins or until ready to use.
Preheat oven to 375º F.
Place potato balls on a large non-stick cookie sheet. Bake for 20 mins until golden brown.
Serve with your favorite sauce,

My inspiration for this creating this recipe was from always making a sausage breakfast casserole. Let me tell you, these tiny little sausage potato ball gems are creamy on the inside and crunchy on the outside! A great breakfast appetizer...
