Salad
1 C cooked Brown Rice
1 can Niblets Corn, drained
1 Sweet Red Pepper, diced
1 C Peanuts
1 C Raisins
1 C Sunflower Seeds
1 Carrot, grated
3 Tbsp Cilantro, finely chopped

Dressing
1 Clove Garlic, finely chopped
4 Tbsp Soya Sauce
3/4 C Olive Oil
2 Tbsp Lemon Juice

Mix dressing together vigorously. Pour over salad. As salad ages the peanuts will soak up the dressing and soften. A hearty salad...a small serving is very satisfying. Yummy!
