Ingredients:  
Ingredients:  
3 large eggs beaten well with 1/2 cup oil in medium bowl
Add 1/2 tsp pepper, seasoned salt to taste, 3 crushed garlic cloves,
3/4 tsp. oregano or marjoram dried
2 Tbsp chopped parsley or herb of choice

In large bowl add
1 cup bisquick with 1/2 cup Parmesan cheese
Add 3 cups thinly sliced zucchini (see note below) and mix with fingers to coat veg with dry ingredients
add liquid to dry ingredients and mix well
Spread in pan and top with more parmesan cheese or bread crumbs mixed with a little butter
Cool and slice into squares
Can be frozen

Use a mandolin to slice zucchini thinly
3 cups is 2 or 3 small zuccihini
Note* must be thoroughly cooked or else the inside will be somewhat underdone



Heat oven to 350º
Oil a 9 x 13 " pan . I use cooking spray to ensure it doesn't stick to pan
