4 lb. potatoes, peeled and quartered (small ones can be left whole)
1 lb. best pork sausages
1 lb. thick cut bacon
3 onions
1 (16 oz.) ham stock, or beef or chicken, heated
4 Tbsp. fresh parsley, chopped
salt and pepper to taste

Directions:
Directions:
Preheat oven to 300º. Grill the sausages and bacon until just colored. In a heavy bottom pot start layering onions, then bacon, then sausages. The last layer will be the potatoes. Season and add parsley. Pour the hot stock over the top. Place on top of the stove and bring to a boil. Cover and place in heated oven for 3-5 hours. Check every 2 hours adding more stock if necessary.
