5 Lbs Salad Potatoes (or 6 Lg Potatoes)
1/4 Lb Bacon
1/2 Cup Onion (chopped)
1/2 Cup Sugar
2 TBLS Flour
1 tsp salt
1/2 Cup Cider Vinegar
1/2 Cup Water
Minced Parsley
Crumbled Bacon

Directions:
Directions:
Cook potatoes with salt until tender. Drain & cool until easy to handle. Peel & slice 1/4" thick. Sauté bacon until crisp. Remove & drain saving 2 TBLS. Return to pan. Stir onions into drippings, sauté till soft. Blend in sugar, flour & salt, then add vinegar & water. Cook, stirring constantly until mixture thickens. Fold in potatoes & bacon carefully. Let stand 15 - 30 minutes to blend flavor. Spoon in serving bowl. Sprinkle with parsley & crumbled bacon.

Best served warm. If sauce is too tart, add a little more sugar!!

(David's Note: FOR LARGE PARTIES: use 20 Lbs potatoes & 5 times dbl recipe for sauce. (Dbl sauce & cut flour by 1 TBLS. Dbl = 3 TBLS). ???? 😊
