Egg Plant Fries Recipe

Ingredients:  
Ingredients:  
1 big eggplant
2 Tbsp flour with Salt & pepper in a bowl
3 eggs beat in a bowl for an egg-wash
Panko mix on large plate
1 1/2 - 2 1/2 cups Panko and add 1 1/2 - 2 1/2 cups of Panko and add into it 1 1/4-2/ 1/2 Panko it 1/4 - 1/2 cups of Parmesan cheese 9 I used the sprinkle kind)
Pre-heat oven into oven to 350. Cut up eggplant into fry like pieces flour mix.
Dip the sticks into the flour mix.
Now run it through the eggwash.
Roll into the Panko mixture
Place on ungreased cookie sheet or wire rack.
Bake until golden brown
Serve with Basil Ketchup.

Basil Ketchup (Great ketchup for Zucchini fries or fried cheese).
1 Tbsp garlic minced
1/4 cup olive oil & salt & pepper
1/8 tsp (or more) red chili flakes (pepper flakes)
1/2 cup apple cider vinegar
1/2 cup brown sugar
1 tsp Worcestershire sauce
12 oz can tomato sauce
3 Tbsp tomato paste
Basil - Use dried 3 Tbsp or fresh just chopped small.
Stir all ingredients together in pot bring to a simmer for 30 minutes. Turn down and on low until thickened.
