1 lb pasta
3 T butter
3 T flour
1 1/2 C milk (whole is best)
1 lb block cheese (your choice - don't use pre-shredded)
1/2 t nutmeg
1/4 t cayenne pepper

Directions:
Directions:
While pasta cooks according to instructions, prepare sauce. Melt butter over medium heat and add in flour; Whisk long enough to remove raw flour flavor (@ 3 mins); Keep whisking so doesn't clump; Slowly whisk in milk; Continue to whisk until milk thickens; Stir in 2/3 of the cheese until melted; add spices

Combine sauce and cooked pasta; place in dish. Top with remaining cheese. Broil until cheese browns a little.

Personal Notes:
If you want to prepare in advance, refrigerate and bake covered in foil at 350 degrees for 30 mins. Then remove foil and broil for few mins to brown cheese. Can change up cheeses and spices.
