1 lb Ground Beef
2 slices Bread
½ cup Milk
½ cup diced Onion
½ cup diced Green Pepper
1 large Egg
1 small Potato, grated
½ cup Ketchup
½ tsp Salt
½ tsp Black Pepper

Directions:
Directions:
In a small bowl, break up the bread and add the milk. Let soak for a few minutes. Place the ground beef in a large bowl and season with salt and pepper. Add in the bread mixture, egg, onion, green pepper and potato. Mix well with hands. Spread mixture into a loaf pan (8x4 or 9x5). Spread ketchup on top. Bake at 350°F for an hour.

Meatloaf was one of Dad's favorites. He liked his meatloaf with stewed turnips. I hated stewed turnips and still do. I always serve mine with mashed potatoes. This is Mom's original recipe that Linda found in her files. Over the years I've spiced it up a bit. I add in a teaspoon of fresh chopped sage, a teaspoon of Worcestershire sauce, ½ tsp ground mustard, and one clove finely chopped garlic. I sometimes make a Mexican version replacing the milk with hot salsa. Omit the potato and add in ½ cup Monterey Jack cheese and a 4 oz can of green chilies. Season with ½ tsp cumin and substitute ketchup with salsa.
