2 c. zucchini, sliced 1/4" thick
3/4 c. sugar
4 tbsp lemon juice
4 tbsp tapioca (minute)
2 tsp cornstarch
1 tsp cinnamon
1/2 tsp nutmeg
2 tsp butter
2 pie crust (9 inch)

Directions:

Arrange slices of zucchini in pie shell. Mix remaining ingredients and sprinkle over zucchini. Dot with butter. Cover with pie crust and bake at 350 degrees for one hour.
