4 slices Bacon
1 Sm Onion, chopped
1 Carrot, shredded
1 tT Flour
1/4 C. Vinegar
2 T. Sugar
1 dash Pepper
1/2 C. Water
1 lb. Fresh Spinach
1 Hard-Boiled Egg chopped

Directions:
Directions:
Fry bacon until crisp. Remove from pan, drain on paper towels and crumble.

Saute onion and carrot in bacon fat until just tender.

Sprinkle with flour and cook one minute. Add vinegar, sugar, dash of pepper, and water. Bring to boil.

Pour over spinach and top with crumbled bacon and chopped egg.
