Ingredients:

1 box Uncle Ben's Classiques-Long Grain & Wild Rice (with the green band)
1 can (small) peaches & cream niblet corn
1 red pepper chopped finely
2 green onions chopped
1 cup salted peanuts (at least)
1 cup currants
1 cup roasted sunflowers (at least)
3 tbsp parsley (I usually omit this) chopped
1 grated carrot
In a jar mix:
1 clove of garlic minced
4 tbsp soya sauce
3/4 cup oil (I do not use Olive Oil as it has an overwhelming taste in the dressing)
2 tbsp lemon juice

Cook rice as directed on package and cool. Mix all ingredients together except nuts,currants and jar mix (these are added at the last minute).
