1 medium head cabbage
1 large or several small carrots
1 green or red bell pepper
1 small onion
1 t. salt
1 c. vinegar
1/4 c. water
2 c. sugar
1 t. celery seed
1 t. mustard seed

Directions:
Directions:
Shred cabbage, carrot, pepper and onion finely into a large bowl. Sprinkle the mixture with salt and let sit for an hour. At the end of the hour drain and if desired rinse and drain again the cabbage mixture. In a pot mix vinegar, water, sugar, and celery and mustard seeds. Bring the mixture to a boil and boil one minute. Then let cool (I do this while the cabbage is sitting.)

When the cabbage mixture is done and the syrup is cool, mix them together. Pack in quart or pint canning jars, and process closed jars for 15 minutes in a boiling water bath.
